It is possible to dodge enemy attacks, though not with the B button. If you tap forward on the Circle Pad between when an enemy starts it’s attack animation and when it hits you, you can duck under its limbs and get behind it.
I haven’t ever been able to dodge backwards and I don’t think it’s possible to dodge grapples.
